When we go camping, I (pre-)prepare the rice in de morning. This way we only have to come up with a veggie-stir-mix thing to mix into the rice at the end of the day. I boil the amond of water I need for the rice. I add the rice when the water is boiling. Bring back to the boil. Now turn off the heat. Carefully pack your pan into towels and place the rapped pan in bed.. Cover carefullywith the bedding. At the end of the day the rice is ready to be eaten. This way of cooking is wery helpfull when you have a lot (we have 3) of hungry kids at the end of the day. Love your tips and adventures.
First as a Greek let me say I love that you use olive oil (here we just say oil,we know is olve oil) Haloumi is a great cheese from Cyprus and sometimes i put some oil in the pan spread lots of sesame seeds on the haloumi and fry till the seeds are golden. Put it on a plate and a tablespoon or two of honey on top The salty and sweet taste with the seeds in between tastes great PS Of course when we say cheese you understand its feta.... LOL and second PS we dont say Greek yogurt of course,just yogurt double LOL

Yummy! All these recipes look amazing!! I am the lover of cilantro so I loveee all these cilantro garnishes!! The best way to coat anything in corn starch or flour is putting them in a ziplock bag or any container with about 1 table spoon of flour and shaking it!! Then it applies a thin coat of starch to your tofu!

We are seniors and thought since I can across a van made in 2000 in awesome shape we would try it out. I love it, my husband haha says he enjoys it. So maybe one day we will have one custom built like you. You site is so helpful and I enjoyed your travel across our beautiful Canada. Most sites are in California . By far the funniest show so far and the most mouth watering. I am definitely going to try the Veggie Fajitas, Gen Taofu, and the Masala dish. I do a variation on your pesto dish. Its a 3P dish: Pasta Pesto Primavera. I throw veggies (broccoli, cauliflower) into the water with the pasta and instead of feta I add black olives. One of my fave dish that would be easy to make in a van: Tofu Coconut Curry w/ Veggies INGREDIENTS Cooked brown rice to your taste. 2 tablespoons of coconut oil or olive oil 2 small white onion, chopped (about 2 cup) Pinch of salt 2 tablespoon finely grated fresh ginger 4 cloves of chopped garlic 1 chopped red bell pepper 1 chopped yellow, orange or green bell pepper 4 carrots, peeled and sliced 1 wedge of cauliflower chopped 1 small brick (approx 6-8oz) of FIRM tofu, patted dry and cut into small cubes 4 tablespoons Thai Kitchen (brand) red curry paste 2 cans (14 oz each) regular coconut milk 1 cup water 3 cups of chopped kale 3 teaspoons of coconut sugar or brown sugar 2 tablespoons of soy sauce 4 teaspoons of rice vinegar or fresh lime juice Add either 1 tsp of Garam Masala or instead you can make your own Garam Masala by mixing the folllowing spices to your preference: chili, coriander, cumin, turmeric, cinnamon, cardamon, black pepper and All Spice Garnish (optional): fresh basil or cilantro INSTRUCTIONS Keep the brown cooked brown rice warm but set it aside until you’re ready to serve the coconut curry over it. Begin by heating the oil in a large sauce pan over medium heat. Add the onion and cook until the onion is translucent. Add ginger and garlic and stir until fragrant (under 1min). Add the bell peppers and carrots and cook, stirring occasionally, until the bell peppers are a bit soft. Then add the curry paste and cook, stirring often, for 1 min. Add the cubes of firm tofu and continue to stir for 2 min. Add the coconut milk, water, and brown sugar as you continue to stir. Bring the mixture to a simmer over medium heat and add the kale. Reduce the heat to a gentle simmer, stirring occasionally until all the veggies have softened (about 10 mins). Turn off the heat and add lime juice OR rice vinegar. Season with salt and or pepper, to taste. Serve over rice & garnish.

You cook and eat better than many people who live in much bigger houses and apartments. These house and apartments usually have far better cooking equipment.
I’m officially obsessed with your channel. You two have amazing content and incredible chemistry! And so many great recipes, I can’t wait to try them all! One of my favorite simple recipes is Cacio e Pepe: Ingredients: Thick spaghetti (the thicker the better) Freshly ground black pepper (must be fresh cracked) Pecorino Romano Cheese 🧀 Kosher salt Butter 🧈 (optional) This recipe is all about simple, high quality ingredients in the right proportions, which can be tricky. Once you master it though, it is very simple to make, and incredibly flavorful and rewarding. If you really want to take this recipe to the next level, you can make your own spaghetti. Directions: 1. Undercook the spaghetti in salted boiling water. You still want it to be firm and have some bite to it when you take it out of the water. 2. While the spaghetti is cooking, crack some fresh black pepper into a sauté pan over medium heat for about 1 minute. Be very generous with the black pepper, as this is where all your flavor comes from. I usually use about 20 twists of my pepper mill. Optionally, you can add one to two tablespoons of butter to the sauté pan, and cook until the butter starts to bubble, but before it goes brown (while this is not traditional, it does make it easier for everything to come together in the pan). 3. Take a cup of the water from the cooked pasta, and add it to the sauté pan with the black pepper, and continue to cook and let it simmer and reduce. 4. Take the pasta from the boiling water, and transfer it to the sauté pan with the black pepper. _Do not throw out the water from the pasta._ You will still need it to make the sauce. 5. Continue to cook the pasta, stirring it in the sauté pan with the black pepper and the pasta water, until it is al dente. Add more pasta water to the mixture as the water is absorbed by the pasta, until you almost have a very thin sauce with the water. 6. Remove from the heat, and add finely grated Pecorino cheese. As you add the cheese, continue to stir the pasta so that the cheese does not curdle. Also, be careful that the pan is not too hot, or this will also cause the cheese to start to curdle. You can use some of the left over pasta water to adjust the consistency of the sauce at this point. The sauce should coat the pasta, and run down and pool at the bottom of the pan. You want it to be almost like a very thin gravy. 7. Plate the pasta, forming a nice nest with the noodles, and pour the sauce from the pan over the top. Garnish with more fresh black pepper and grated pecorino cheese. Serve and enjoy! You can find some great videos on RUclips on how to make this recipe. Without eating meat, hemp seeds and Chia seeds goes a loooong way for nutrition 😊 just sprinkle them in your dishes and you don't notice them even there.
I'd definitely start with a small sprinkle. Maybe combine them in a little jar and shake them on whatever you are cooking. I try to add to soups while cooking or even a salad. The nutrition in seeds are amazing and very important, especially if you are thinking of long term... Meatlessness 😊 I sometimes chop up pumpkin seeds too in my jar mixture for all the essential nutrients. Full of proteins too. I have been meat free for 5 yrs and noticed I benefited from getting different sources of protein building blocks.

Hi just bought an older van and was looking for some van hacks when I stumbled upon your site. I love it! Very refreshing! So of course I had to watch all the segments. We are seniors and thought since I can across a van made in 2000 in awesome shape we would try it out. I love it, my husband haha says he enjoys it. So maybe one day we will have one custom built like you. You site is so helpful and I enjoyed your travel across our beautiful Canada. Most sites are in California . As we know the seasons here are much different and have there challenges.

Seriously awesome meals! Thank you for these! They sure don't have to be cooked in a van! They are great recipes for anyone, anywhere! For variations, you could add shrimp to any of these dishes & any rice instead of white.

By far the funniest show so far and the most mouth watering.
I am definitely going to try the
Veggie Fajitas, Gen Taofu, and the Masala dish.
I do a variation on your pesto dish. Its a 3P dish: Pasta Pesto Primavera. I throw veggies (broccoli, cauliflower) into the water with the pasta and instead of feta I add black olives.
One of my fave dish that would be easy to make in a van:
Tofu Coconut Curry w/ Veggies
INGREDIENTS
Cooked brown rice to your taste.
2 tablespoons of coconut oil or olive oil
2 small white onion, chopped (about 2 cup)
Pinch of salt
2 tablespoon finely grated fresh ginger
4 cloves of chopped garlic
1 chopped red bell pepper
1 chopped yellow, orange or green bell pepper
4 carrots, peeled and sliced
1 wedge of cauliflower chopped
1 small brick (approx 6-8oz) of FIRM tofu, patted dry and cut into small cubes
4 tablespoons Thai Kitchen (brand) red curry paste
2 cans (14 oz each) regular coconut milk
1 cup water
3 cups of chopped kale
3 teaspoons of coconut sugar or brown sugar
2 tablespoons of soy sauce
4 teaspoons of rice vinegar or fresh lime juice
Add either 1 tsp of Garam Masala or instead you can make your own Garam Masala by mixing the folllowing spices to your preference: chili, coriander, cumin, turmeric, cinnamon, cardamon, black pepper and All Spice
Garnish (optional): fresh basil or cilantro
INSTRUCTIONS
Keep the brown cooked brown rice warm but set it aside until you’re ready to serve the coconut curry over it.
Begin by heating the oil in a large sauce pan over medium heat. Add the onion and cook until the onion is translucent. Add ginger and garlic and stir until fragrant (under 1min).
Add the bell peppers and carrots and cook, stirring occasionally, until the bell peppers are a bit soft. Then add the curry paste and cook, stirring often, for 1 min. Add the cubes of firm tofu and continue to stir for 2 min.
Add the coconut milk, water, and brown sugar as you continue to stir. Bring the mixture to a simmer over medium heat and add the kale. Reduce the heat to a gentle simmer, stirring occasionally until all the veggies have softened (about 10 mins). Turn off the heat and add lime juice OR rice vinegar. Season with salt and or pepper, to taste. Serve over rice & garnish.
Good lord - We'll give it a try for sure! Only the ingredient list makes us salivate.

I’m officially obsessed with your channel. You two have amazing content and incredible chemistry! And so many great recipes, I can’t wait to try them all!
One of my favorite simple recipes is Cacio e Pepe:
Ingredients:
Thick spaghetti (the thicker the better)
Freshly ground black pepper (must be fresh cracked)
Pecorino Romano Cheese 🧀
Kosher salt
Butter 🧈 (optional)
This recipe is all about simple, high quality ingredients in the right proportions, which can be tricky. Once you master it though, it is very simple to make, and incredibly flavorful and rewarding. If you really want to take this recipe to the next level, you can make your own spaghetti.
Directions:
1. Undercook the spaghetti in salted boiling water. You still want it to be firm and have some bite to it when you take it out of the water.
2. While the spaghetti is cooking, crack some fresh black pepper into a sauté pan over medium heat for about 1 minute. Be very generous with the black pepper, as this is where all your flavor comes from. I usually use about 20 twists of my pepper mill. Optionally, you can add one to two tablespoons of butter to the sauté pan, and cook until the butter starts to bubble, but before it goes brown (while this is not traditional, it does make it easier for everything to come together in the pan).
3. Take a cup of the water from the cooked pasta, and add it to the sauté pan with the black pepper, and continue to cook and let it simmer and reduce.
4. Take the pasta from the boiling water, and transfer it to the sauté pan with the black pepper. _Do not throw out the water from the pasta._ You will still need it to make the sauce.
5. Continue to cook the pasta, stirring it in the sauté pan with the black pepper and the pasta water, until it is al dente. Add more pasta water to the mixture as the water is absorbed by the pasta, until you almost have a very thin sauce with the water.
6. Remove from the heat, and add finely grated Pecorino cheese. As you add the cheese, continue to stir the pasta so that the cheese does not curdle. Also, be careful that the pan is not too hot, or this will also cause the cheese to start to curdle. You can use some of the left over pasta water to adjust the consistency of the sauce at this point. The sauce should coat the pasta, and run down and pool at the bottom of the pan. You want it to be almost like a very thin gravy.
7. Plate the pasta, forming a nice nest with the noodles, and pour the sauce from the pan over the top. Garnish with more fresh black pepper and grated pecorino cheese. Serve and enjoy!

Without eating meat, hemp seeds and Chia seeds goes a loooong way for nutrition 😊 just sprinkle them in your dishes and you don't notice them even there.

I'd definitely start with a small sprinkle. Maybe combine them in a little jar and shake them on whatever you are cooking. I try to add to soups while cooking or even a salad. The nutrition in seeds are amazing and very important, especially if you are thinking of long term... Meatlessness 😊 I sometimes chop up pumpkin seeds too in my jar mixture for all the essential nutrients. Full of proteins too. I have been meat free for 5 yrs and noticed I benefited from getting different sources of protein building blocks.
Also... I use "NutritionFacts" on RUclips for a ton of plant based Real info.
